Why is Eggman obsessed with, well, whatever it is he's obsessed with in whichever episode you're playing? His cybernetics, manufacturing capacity, and automation are post-scarcity. He has access to trans-lightspeed technology. The man could have whatever he wants!

Ah, my dear, but you answered your own question if you take a close look. Indeed, Eggman can have everything he wants. When someone is in that position, they have no challenges. So they have to create them. So Eggman wants that which he actually can't get.

Wealth isn't enough for Robotnik because he's obsessive-compulsive. His original obsession was with the uncleanliness and unpredictability of nature, hence his plan to replace all animals with robots.
