Ladies and gentlemen, I present The Monty Python. In a highball glass, over ice: Dangerously delicious.

So what would you call a virgin one of those (i.e. made with soft cider instead of jack)? An Eric Idle? :)

On the subject of applejack...

Laird's is 65% "grain neutral spirits" -- grain alcohol, Everclear. I'm not a fan, the stuff's kind of harsh. (I guess I'm the same way with brandies and whiskeys as you are with coffee.)

A few years ago I had an email conversation with a fellow who started/runs a distillery down in Portland. I just went Google-ing for it and I think it was Clear Creek Distillery. Their apple brandy page is here: http://clearcreekdistillery.com/apple.html

The 2-year-aged apple brandy beats Lairds without a question. The "Eau de Vie de Pomme," which spends 8 years in oak, well... it's almost criminal to mix it with anything.

Bryan.

I noticed a local bar had Applejack on hand, so had the bartender make me this, except they used St. Germain Elderflower Liqueur in place of the elderberry syrup. Worked well. Thanks for the recipe!
