So, I tried this recipe:
  • 3/4 cup evaporated milk
  • 3/4 cup milk
  • 1 cup double-strong coffee, cooled
  • 4 tbsp. sugar
  • 3 cups ice
Put everything into a blender and blend until smooth. And sure enough, it tastes just like a Starbucks Frappacino, including the bit about being way too damned sweet. Gotta find a way to mitigate that. But nice after a day of mowing the lawn.

Are you sure you used evaporated milk, or condensed milk? Evaporated doesn't (I think) contain any added sugars, but condensed does. The condensation process for evaporated milk will tend to make it slightly sweeter tasting, though.

Try dropping the sugar to half, if not none, if you find the recipe too sweet.

It's evaporated. I checked. Most of the sweetness comes from the twelve(!) teaspoons of sugar.

Hmm. That might be a good place to start.

I agree with you. An entire 1/4 cup!? Yeesh.

I find the regular sort too thick, try using skim milk, perhaps, once you pare down the sugar a bit.

Twelve? The recipe only calls for four. Where's the rest come from?

4 tablespoons

1 tablespoon = 3 teaspoons.

3x4=12

Next up, try cold-steeping the coffee. It cuts a lot of the bitter. Have to make it well in advance, but it keeps for weeks in the fridge.

Perhaps try it _not_ blended? Our local cafe does something similar (the "Iced Tsunami," a nod to the big one that will surely inundate our village at some point) but just pours the milk blend onto the double-strong coffee. As with a Thai iced coffee, I make a point of leaving it unstirred -- I like the intersip (or even intrasip) contrast of flavors.

Cold strong coffee with coffee or chocolate ice cream blended in. Yumm. For less sweet, freeze some coffee-cubes and substitute for some of the ice cream.

Personally I prefer Thai Coffee style though.
